Is this fun? I'm 7-0 in MM, but this is the level of players I keep getting against me. My MM elo has gone up a whopping ~25 points since initial calc as these people are all several hundred elo below me. I'm either stomping them in a matter of minutes or sw trolling like here; I bet my enemies also super enjoy playing these games.

I'd rather get no matches than be forced to noob bash people that are obviously FAR below my level.

It's not ideal, but I think you have to treat at least your first 10 games as calibration games. The relevant rating for matching is:

The graph on this page is basically useless for you because the system is convoluted. At the moment it says it currently thinks your rating should have started at 1817 (a week ago) given your matches since then. Also that your rating should be 1839 today. But in reality your rating was actually 1500 a week ago. If you keep winning, then in another week I expect it to think your rating should have been even higher than 1817 two weeks ago.

You should move out of the new player matching range soon.
