Zero-K has moved into a new server software because old one (UberServer) could not handle large number of players in tests.
This will allow faster development of Zero-K lobby, proper matchmaking etc, but unfortunately breaks compatibility with existing non Zero-K lobby clients, so please use Zero-K lobby for now.
Because it's a full rewrite of lobby server with changes done to springie autohosts, zero-k lobby and website/nightwatch, do expect some quirks. Bug reports are very much welcome at https://github.com/ZeroK-RTS/Zero-K-Infrastructure/issues

Is it possible to still use the Spring server with the old protocol in ZKL for other spring games? Or is an older ZKL version with disabled auto updates necessary?

There is no ZKL version capable of connecting to both current and old spring server due to different protocols.

Where can I get the latest ZKL version that was still capable of connecting to the old spring server? I would not use the old server too often compared to the new ZK server, but somehow it would also increase the importance of ZKL if it was able to sometimes play other spring games, too. Wouldn't it be possible to just implement both protocols in ZKL and allow to switch between them?

ZKL probably won't get old protocol compatibility (unless someone contributes) because very few people would use that and for them other old protocol compatible lobbies exist.
