They have tons of counters. Quake (when on tower), Tremor, Impaler, Likho (when on tower), anything if it's moving, Lance, Lucifer, and if it's on the ground, basically all other artillery.

I kinda agree with that part. They are units that stall games because of their very strong defensive ability but actually limited offensive potential. And they require specialized counters. And they eliminate large range of small units from effective play due to their large AoE.

It's not a counter if it costs a disproportionately larger amount of resources than the unit being countered.

I'll just say there are maps that would be much better maps if Crab didn't exist (Altored Divide, Highway, Delta Siege, Industrial Revolution, Hide and Seek, Talus, LLTAComplex, Sacrifice, etc...)

I think almost all of those maps would just be bad for a different reason, or indeed are already bad for different reasons (looking at you, Talus and LLTAComplex). Maybe Highway 95 would be meaningfully improved.

Also, if you expect the design of the game to work equally well in a 1v1 and a 16v16 on this map then you are probably going to be disappointed.
